Soaked legumes are lighter in texture and cook up well easily. But the texture & flavor of the chickpeas is not the same. This helps to cook them faster. If you are using old chickpeas that have been sitting in the shelves for long. Serve Chana Masala with fluffy Basmati Rice, one pot Jeera rice, No yeast fast Naan, Roti, Chapati or Paratha. So taste test add more salt and squeeze some lemon juice if you have not used amchur.

Chana masala will thicken slightly further upon cooling. If you don’t puree the onion tomato masala you will require lesser. I use about ¾ to 1 cup more water. Pour more water as needed to make a gravy. You will be left with 1¼ cup stock which you will add it. Later add the puree back to the same pan.

I cooked this recipe for a senior center weekly indian food program. Never knew blending makes your chana masala so delicious. Used tinned chana and pressure cooker, served with coconut rice and roti. Do I measure 3 cups of soaked chickpeas and save the remainder for somthing else? I measured 3 cups of dry chickpeas but when soaked this is around double.
I used the soaked amount so I had half left over. The recipe plugin I use won’t do the alternate quantities automatically. If you 3x the recipe, you must 3x the quantities mentioned in the parenthesis/brackets.
